Candy / Confection

Applications > >Candy / Confection

In a candy store, the vivid appearance of sweets often determines a consumer purchase. Both the boiled candy and gummy categories have high acidity and low moisture, which can allow for vibrant hues.

Natural candy with real juice may utilize fruit-based anthocyanins to intensify color. Whether a chocolate coating is derived from cocoa butter or palm kernel oil, oil dispersible technology is required.Naturally colored sugar coatings, toppings or frostings provide an opportunity to differentiate product designs. Moisture control is the key to prevent color migration. You want the perfect color for your dessert, candy or confection application. We offer products with high heat stability in a variety of hues.

Oil Dispersible Technology

sugar cookie naturally colored ddw the colour house oil dispersible color technology caramel colors natural coloursDDW offers a proprietary, oil dispersible technology for naturally derived coloring that can be used in sanding and decorative sugars for your candy or confection product applications. This oil dispersible technology is innovative because it allows for water soluble coloring to be added to oil-based systems or used for plating to ensure even distribution.

The emulsion coloring improves the oil dispersibility of water soluble food coloring that can be added to lipid or fat systems. DDW’s oil dispersible technology allows for new possibilities for naturally derived hues such as browns, pinks and purples — especially as an alternative to synthetic lakes.
