Turmeric contributes both flavor and colour as demonstrated in curry. The leading carotenoid colourings used in rice products are annatto and beta-carotene, both of which enhance cheese appearance. In Latin America, annatto (achiote) is popular among home chefs as a direct ingredient in rice dishes.
